My humble first time attempt to the recipe! I didn’t have sundried tomates and I think that I put a little bit too much garlic in mine, but I know now for next time. xx
@Chloé can I please ask what will we use the cabagge for? I got a lovely red cabagge and Im thinking of doing some fermented-type meal with it using just lemon juice, salt and a tiny splash of apple cider vinegar (can we use apple cider vinegar?). x
In the spirit of sharing my little wins, here is my first ever courgette fettuccine I made it easily using one of the sauces left over from my lasagna yesterday, the white one without garlic.
I added some chilli flakes and sprinkled a mix of roughly chopped nuts that I had soaked and kept in the fridge. Finished with salt and pepper to taste… and it was delicious!
I also added salad, homemade hummus and avocado on the side. I am following the instructions of eating plenty to the letter!

This is also my first ever cashew milk and the first time I’ve cracked open a raw coconut. I had to use a hammer, a saw (yes, honestly!) and two big knives to get into it
I was just thinking how incredible nature is to create something so divinely tough and soft at the same time.
PS: Our little dog Cara who you can see through the glass table was very impressed by the coconut too x
