Flu Buster Soup

This soup is my all time go to when i feel a cold or flu coming and if you can catch it in the early stages this soup can blast all the germs out of the park. The use of all the ingredients work symbiotically together to pack a strong immune punch to the system and the use of goji berries in this recipes brings in the powerhouse superfood.

2 medium sized sweet potatoes chopped with skin left on.
1 punnet of shitake mushrooms sliced
couple handfuls goji berries
1 red onion chopped finely
5 cloves garlic chopped finely
1 red serrano chilli chopped finely
6 cm piece of fresh ginger chopped finely
1 organic veg stock cube
salt and black pepper to season
2 tablespoons olive oil.

In a large saucepan heat the olive oil and add the onion and cook for a couple of minutes.
add the ginger, garlic and chilli and cook for a further 2 mins.
add the mushrooms, potatoes and goji berries and stir add the stock cube and pour enough water to cover everything by 2 inches.
Cook on a high heat until the sweet potatoes are softened.
Use and immersion blender or a normal blender to blitz this soup to enjoy.

Interesting to see the ginger, garlic and chilli triad starring here. One of my favourite sinus congestion reliever recipes is to add these to a mug of tomato juice and heat all together in the microwave. glug whilst still warm/hot and feel the passages open!
