This juicy packed jelly is a healing treat, its packed fully of healthy nutrients, antioxidants and is a great natural source of melatonin. So a slice of this on toast for an evening snack is a must. The kudzu root starch is what is beneficial and healing to the small intestines and the tart cherry is packed full of melatonin, also great for gout and any other inflammatory issue.
2 tbsp Kudzu or Kuzu starch, this can be bought in most Asian shops.
1 and half cups of tart cherry juice preferably organic and unsweetened.
2 teaspoons lime juice freshly squeezed.
2 and half cups fresh of frozen berries, I choose a mix of raspberries, blueberries, cherries and blackberries.
First you need to dissolve the kudzu starch in a heavy bottomed saucepan. Stir constantly with a whisk until it thickens.
Remove from the heat, fold in the berries, taste and if desired add some honey or agave to sweeten, I like to add a couple of drops of almond essence to mine.
Place the contents into a jar and keep refrigerated.
